Ingredients
  

  • 1 cup cottage cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 1/2 cup milk (or unsweetened almond milk)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)
  • Cooked pasta of choice

Instructions
 

  • Blend the Cottage Cheese: In a blender or food processor, combine the cottage cheese, Parmesan cheese, and milk. Blend until smooth and creamy.
  • Sauté the Garlic: In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Combine and Simmer: Pour the blended cottage cheese mixture into the saucepan with the garlic. Stir continuously and let the sauce simmer for about 5 minutes. Season with salt and pepper to taste.
  • Toss with Pasta: Once the sauce is heated through and slightly thickened, remove from heat. Toss with your cooked pasta until it’s evenly coated.
  • Garnish and Serve: Plate the pasta and top with fresh parsley and additional Parmesan if desired.

Notes

You can adjust the thickness of the sauce by adding more milk for a thinner consistency or letting it simmer longer for a thicker sauce.
 
For a richer flavor, add a splash of cream or an extra tablespoon of butter.
 
This sauce also pairs well with veggies like broccoli or spinach stirred in for extra nutrition.
