Cuisine (but you can totally call it American if you want), Italian
Servings 4 Servigs, (Or 2 if you are feeling extra hungry)
- 8 oz (225 g) pasta of your choice (penne, spaghetti—whatever tickles your fancy)
- 1 cup cottage cheese (the hero we didn’t know we needed)
- 1 cup prepared pesto (store-bought is just fine; we’re not judging)
- 1/2 cup cherry tomatoes, halved (for a pop of color and flavor)
- 1/4 Cup grated Parmesan cheese (optional, but why not?)
- Salt and pepper to taste
- Fresh basil leaves for garnish (for those Instagram-worthy vibes)
Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Mix Cottage Cheese and Pesto: In a mixing bowl, combine the cottage cheese and pesto until they’re best friends.
Combine Pasta and Sauce: In a skillet over medium heat, toss the cooked pasta with the cottage cheese mixture. Stir until the pasta is evenly coated.
Add Cherry Tomatoes: Gently fold in the cherry tomatoes and cook for an additional 2-3 minutes until everything is warm and cozy.
Serve: Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese and fresh basil if you’re feeling fancy.
Want to up your game? Add cooked chicken, shrimp, or your favorite veggies to the mix.
This dish can hang out in your fridge for up to 3 days, so meal prep is totally on point.
You can swap low-fat cottage cheese if you’re trying to be healthy—no judgment here!
