Cottage Cheese Pesto Pasta

  • 1 Mixing bowl
  • 1 Skillet
  • 1 Wooden spoon (or whatever you can find)

Ingredients
  

  • 8 oz (225 g) pasta of your choice (penne, spaghetti—whatever tickles your fancy)
  • 1 cup cottage cheese (the hero we didn’t know we needed)
  • 1 cup prepared pesto (store-bought is just fine; we’re not judging)
  • 1/2 cup cherry tomatoes, halved (for a pop of color and flavor)
  • 1/4 Cup grated Parmesan cheese (optional, but why not?)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (for those Instagram-worthy vibes)

Instructions
 

  • Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • Mix Cottage Cheese and Pesto: In a mixing bowl, combine the cottage cheese and pesto until they’re best friends.
  • Combine Pasta and Sauce: In a skillet over medium heat, toss the cooked pasta with the cottage cheese mixture. Stir until the pasta is evenly coated.
  • Add Cherry Tomatoes: Gently fold in the cherry tomatoes and cook for an additional 2-3 minutes until everything is warm and cozy.
  • Serve: Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese and fresh basil if you’re feeling fancy.
