Ingredients
  

  • 2 cups cottage cheese (low-fat or full-fat)
  • 3 large eggs
  • 1/2 cup granulated sugar (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/4 cup all-purpose flour (or almond flour for gluten-free)
  • 1/4 tsp salt
  • fresh berries or fruit compote for topping (Optional)

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease the springform pan lightly with cooking spray.
  • Blend the Cottage Cheese: In a mixing bowl, combine the cottage cheese, eggs, sugar, vanilla extract, and lemon juice. Use an electric mixer or a whisk to blend until smooth and creamy, ensuring there are no lumps.
  • Add Flour and Salt: Gradually fold in the flour and salt using a rubber spatula until fully incorporated. This will help give your cheesecake a nice structure.
  • Pour into the Pan: Pour the cottage cheese mixture into the prepared springform pan, smoothing the top with a spatula.
  • Bake the Cheesecake: Bake in the preheated oven for 45-50 minutes, or until the center is set and the top is lightly golden. You can gently shake the pan to check for doneness; it should not jiggle excessively.
  • Cool and Chill: Once baked, remove the cheesecake from the oven and let it cool in the pan for about 10 minutes. Then, carefully run a knife around the edges and release the springform pan. Transfer it to the refrigerator to chill for at least 2 hours (or overnight) before serving.
  • Serve and Enjoy: Slice the cheesecake and serve it plain or topped with fresh berries or fruit compote. Enjoy this delightful treat guilt-free!
